# 701 Craft Steak We spend a day behind the scenes with the new executive chef Shane McBride to see how Tom Collichio's latest NY Steakhouse is doing, and maybe, just maybe answer the question "Is this the best steakhouse in the city?". Shane does a real simple cooking demo for us as well, typical Collichio Craft style cooking.

Hi Mike,

I have been watching your show for quite some time. Always enjoy you. Took my wife to Bacaro last night after we found it (which took some doing on that block!). Great place, delicious food and wine and they couldn't have been nicer. Thanks.

Subject: Found the skirt steak recipe on the Food Emporium site.

Found it: (I definitely want to try this. Thanks Colameco, your show is always worth watching.)

SKIRT STEAK WITH LENTILS
Serves 4

INGREDIENTS:

4 ea 8oz., skirt steaks
6 oz., dried lentils any variety you choose
1 large carrot peeled diced medium
1 large parsnip, peeled diced medium
half Spanish onion, small dice
2 cloves garlic small dice
half bulb celery root, peeled, small dice
1 t chopped fresh thyme
2 oz., olive oil
2T fresh chopped parsley
2.5 C chicken stock or water
salt and pepper to taste

METHOD:

Pick through the lentils to remove any odd bits, stones, etc., In a pan, heat the pan first over a medium flame, then add the oil and all the diced vegetables plus the chopped thyme and sauté ˘riefly until they just begin to cook, Add the lentils, stir together, then add the stock or eater and bring to a simmer. If you choose you can lower the heat and cover loosely with a lid, or just allow them to simmer. Cooking time varies depending on the lentil variety, allow minimum 25 minutes to up to 50 minutes until the liquid is absorbed and the lentils are tender, but not too soft. If need be add a little additional liquid to the pan if it gets dry and the lentils are not yet cooked.

Once the lentils are done remove from heat, season with salt and pepper finish with chopped parsley and hold warm. If you want them extra creamy add a little butter or olive oil at the end and stir it in with a dash of good vinegar or lemon juice.

Season the steaks with salt and pepper, heat a pan medium high add a little oil and cook the steaks to desired doneness. Once cooked arrange the lentils on a plate, place the steaks across the top, and serve with good crusty bread.

Love your show but I never get the complete recipe down. I could practically taste the steak lentil mix. Now I'd really like to try it. Can you share your recipe?

Did anyone ever get this recipe? Someone said it is on the Food Emporium site, but I can't find anything to click on at that side to find recipes. Help!

Subject: Craft Steak Pans

Mike commented on how nice the pan Shane was using to cook the steak in the Craft Steak episode and Shane said the name but I cannot make it out. Does anyone know the brand of pan used at Craft Steak? Thanks

I was so hoping to get that Skirt Steak / Lentil recipe. It would certainly make for more traffic to your website if you listed recipes you made on previous episodes.
